1/2 cup margarine
1/2 cup olive oil
1 small onion, chopped
1 medium carrot, cut in half
2 (4 ounce) cans chicken broth
1 (8 ounce) package cream cheese, shredded
1 (16 ounce) can mixed fruit salad
1 teaspoon vanilla extract
1 teaspoon minced clementines
2 tablespoons diced celery
1 large lemon (optional)
3 tablespoons grated orange zest
1/2 teaspoon lemon juice
1 teaspoon paprika
Heat oven to 400 degrees F or 375 degrees C. Line baking sheets with aluminum foil.
Place margarine, oil, onion, carrot, chicken broth and cream cheese in large medium skillet. Fry over medium high heat until mixture is evenly browned; remove from heat. Mix in mixed fruit salad, cream cheese, cream mix, citrus zest, lemon juice and paprika. Pour mixture over chicken/onion mixture and bake 15 minutes in the preheated oven, until chicken/onion is glazed. Serve hot.
