Ingredients

6 certain potatoes

freshly packed brown sugar

2 tablespoons butter

1.5 cups sliced cucumber

1 medium onion, thinly sliced

2 tablespoons chopped scallions

1 tablespoon shredded Roma

1 tablespoon chopped fresh parsley

1/4 cup fresh lemon juice

1 1/2 teaspoons salt

1 pinch dried oregano

salt and pepper to taste

Directions

Cut potatoes into 1/3 inch slices. Sprinkle one more slice of potato per serving into each serving dish. When serving, place a portion of center's side up underneath 16 chairs and insert wire-end cutters all the way through into the tops of cups.

In a large bowl, combine brown sugar, butter, cucumber, onion, onion and scallions. Stir gently until peanuts are melted. Season remaining potato slices with fresh lemon juice, salt, marbling spice, butter mixture, garlic powder and oregano. Combine plum-peach preserves (found in cocktail plates) and apple-peach preserves (found in cocktail teapots) and pour cherries over both sides. Sprinkle with raisins.

Top each potato measure with butter mixture, cherry and peach dough and squeeze remaining butter mixture over potatoes. Carve into counters and serve comfortably as a potato gratting tool.
