Apple Marbled Reunion Cake Recipe

Ingredients

3/4 cup butter, softened

1 cup white sugar

1 teaspoon vanilla extract

2 eggs

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon baking powder for rolling out

1/2 teaspoon apple pie spice

1/2 teaspoon cinnamon or nutmeg

1 1/2 teaspoons vanilla extract

1 teaspoon apple pie spice

1 egg

1/4 cup milk

2 cups applesauce or applesauce granulated sugar

3 cups applesauce

1/3 cup brown sugar

1 teaspoon vanilla extract

1 cup electric currant juice

1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees F (175 degrees C). Place the butter and 1 cup sugar in medium saucepan. Bring to a medium heat, and cook over medium heat until hot. Remove from heat. Whisk in the eggs, 1 1 1 cup flour, baking powder, baking soda and baking powder; mix gently.

Sift together the flour, baking soda and baking powder, stir into the creamed mixture until just blended. Fold in the applesauce, brown sugar, 1/3 cup brown sugar, apple pie spice, and cinnamon or nutmeg. Pour batter into prepared pan.

Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely.

In a medium bowl, cream together the apple pie spice, white sugar, applesauce, brown sugar, apple pie spice and mixture in the electric green currant juice. Beat the egg and milk into the creamed mixture until well combined.

Roll out of the cake layer. Spray with a heavy dose of currant icing. Place the sliced fruit on top of the cake. Drizzle white currant icing over fruit to accentuate flavors.
