1 (18.5 ounce) package lemon flavored Jell-O mix
1 (12 ounce) can crushed pineapple with juice
1 cup water
1 (4 ounce) can crushed pineapple with juice (optional)
1 (4 ounce) can cream pineapple with juice (optional)
In a large bowl, stir gelatin (water) into gelatin with 1 cup pineapple juice. Stir over low heat for 5 minutes or until gelatin is completely dissolved, stirring occasionally. Remove from heat; stir in pineapple with juice. Pour into 12 large plastic and waxed bowls; cool completely. Form into 2-inch thick slices. Cover and refrigerate until set before cutting into squares. Refrigerate leftover pineapple.
There's nothing festive about this. It's a great place for summer lunch.
