1 (14 ounce) can red kidney beans
1 (4 ounce) can shredded Cheddar cheese
1/2 (15 ounce) can crushed pepper jack cheese
1/2 red bell pepper, seeded and diced
1 tablespoon chili powder
In a large bowl, mix beans, cheese, red pepper, chili powder and chili. Cover and refrigerate overnight.
In the morning, cook beans, pepper jack cheese and chili over a high heat about 30 minutes, stirring constantly until beans are tender. Serve over rice, beans and rice.
