2 (9 inch) pie shells, warmed
4 eggs
2 teaspoons lemon extract
2 1/2 teaspoons orange extract
9 cups boiled water
1 cup all-purpose flour
1 teaspoon baking soda
2 teaspoons margarine
1 teaspoon lemon zest
2 (14 ounce) cans pineapple juice concentrate
1 (6 ounce) can lemon-lime flavored carbonated beverage
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, beat eggs until fully incorporated. Stir in lemon extract, orange extract, boiling water, flour and baking soda. Mix thoroughly. Fold in margarine, lemon zest and pineapple juice concentrate. Pour batter into prepared pies.
Bake in preheated oven for 45 minutes, or until custard is light and juices run clear. Reduce heat to 350 degrees F (175 degrees C) and let cool to room temperature. Serve hot or cold.
