1 pound potatoes, peeled and cubed
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon ground nutmeg
1 (8 ounce) package cream cheese, softened
1 cup butter, softened
1/2 cup shredded Monterey Jack cheese
Preheat oven to 375 degrees F (190 degrees C).
Place potatoes in a large bowl. Mix salt, pepper, nutmeg, and cream cheese; press into potatoes. Place with hands in a large bowl. Cover bowl and refrigerate for 1 hour.
Meanwhile, in a large mixing bowl, mix together butter, Monterey Jack cheese, cream cheese, cheese, and pepper. Shape into 1 thick roll or pat into a 10 inch round, leaving 1 inch border.
Roll out into a 9 inch round. Clean potato of excess grease. Cut into 1 inch strips. Roll strips into 1 inch rectangles. Place on a large baking sheet.
Bake in preheated oven for 5 minutes, until tender. Drain on paper towels and serve hot.
