3/4 cup all-purpose flour
1 egg
1 teaspoon baking soda
1/4 cup milk
1/2 cup brown sugar
1/4 teaspoon salt
1/4 teaspoon orange zest
1/4 pound butter, room temperature
1 (15 ounce) can sliced lemons, drained
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix the flour, egg, baking soda and milk. Beat in the brown sugar, salt and orange zest. Mix well. Stir in the butter, lemon slices, pecans and lemon juice. Let batter work the way it did before assembly.
Fill an 8x8 inch dish or trifle bowl with crusts. Place crusts onto 1 prepared cookie sheet. Brush remaining pecans over top crusts. Bake in preheated oven for 30 minutes or until filled and golden brown.
