1 egg white
1 cup milk
1/2 cup fresh lemon juice
1 (8 ounce) package frozen chopped broccoli, thawed and drained
1 (32 ounce) can frozen chopped green chile peppers and onions
1 cup canned whole kernel corn, undrained
1/3 cup chopped celery
1/3 cup chopped cherries
Lightly grease 12x8x2-inch baking dish.
In a medium saucepan, mix egg whites until soft; keep warm. Mix milk and lemon juice in bowl; heat at medium heat, stirring constantly, until mixture becomes thick.
Pour lemon juice mixture into prepared pan, place pan on medium heat. Bring lightly to a boil, then pour over vegetables and broccoli. Cover and let vegetables cool at room temperature.
In a medium bowl, combine broccoli, green chile peppers, corn, celery and cherries.
Cover, reduce heat to medium-low, and simmer 15 minutes or until broccoli leaves. Serve immediately.
