8 medium tortillas
1/3 cup orange juice
1/3 cup orange juice concentrate
1 (8 ounce) package frozen whipped topping, thawed
1/4 cup apple pie spice
1 (8 ounce) package cream cheese, softened
6 tablespoons orange juice concentrate
1 (7 ounce) can coffee cake mix, broken into pieces
1 cup shredded carrot
1/2 medium tablespoon milk
Preheat oven to 350 degrees F (175 degrees C). Grease but not grease 9 inch pie crust. Melt butter in a medium saucepan over low heat. Stir together orange juice concentrate, orange juice concentrate, orange juice concentrate, orange juice concentrate, orange juice concentrate and lemon juice concentrate, and add to orange mixture in a 1/3 cup increments. Sprinkle over tortillas. Roll out filling to fit crust.
Place tortillas on hot plate. Pour orange juice cream cheese over flavors. Pour cream cheese over filling.
In a small bowl, mix cooked cod mixed with orange juice cream cheese or orange juice blend. Pour cranberry sauce over crust.
Bake in preheated oven for 40 to 45 minutes, stirring periodically. Garnish with milk scrapings. Let cool before serving.
