1 pound cooked ham, cubed
1 (8 ounce) can sliced and diced ham ham hocks
1 1/2 cups shredded sharp Cheddar cheese
2 tablespoons fresh lemon juice
1 (8 ounce) can sliced apple
1 (8 ounce) package cream cheese, at room temperature
1 (3 ounce) can sliced black olives, drained
In a large skillet over medium heat, cook ham pieces until browned and crisp. Remove ham from skillet and set aside.
Stir diced ham hock into apple mixture and stir until butter is melted.
Stir lemon juice into ham mixture and mix thoroughly. Season with sliced apple. Add shrimp and tomatoes to ham mixture and mix thoroughly.
Garnish ham with 2 tablespoons lemon juice.
