Mango Carrot Cake Recipe

Ingredients

1/2 cup butter, softened

1 cup white sugar

1 egg, beaten

1 teaspoon vanilla extract

2 tablespoons finely chopped fresh ginger root of fresh mango

1/4 cup vegetable oil

3 cups fresh carrots

1/2 cup chopped celery

1 teaspoon vanilla extract

1/4 cup chopped walnuts

2 cups chopped pecans

3 cups chopped walnuts

2 teaspoons vanilla extract

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) pans.

In a large bowl, cream together the butter, sugar, egg, vanilla extract and ginger. Beat in the carbonated beverage of choice, mango, oil, carrots and celery. Stir in the ginger, mango and carrot juice. Mix until blended. Spread evenly into the prepared pans.

Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely before cutting into squares.
