Orange Glazed Chicken with Squash Biscuits Recipe

Ingredients

1 (4 pound) whole chicken or turkey, cut into 1/2 inch strips

1 (10 ounce) package orange flavored Jell-O mix

2 large zucchini

1 medium onion, diced

1 green bell pepper, diced

1 (1.5 fluid ounce) jigger vegetable oil

2 cups distilled white vinegar

1 1/2 cups orange juice

1 cup orange juice

cheese powder

1 teaspoon ground black pepper

1/4 teaspoon salt

Directions

Place chicken and vegetables in a mixing bowl. Stuff each of the chicken strips with 1 cup of the gelatin, leaving about 1/2 inch on each strip. Gently squeeze remaining gelatin from strip to about 1/4 inch thick. Set aside.

In a separate mixing bowl, mix 2 large zucchini, 2 medium onions, 1 green bell pepper, 1 (1.5 fluid ounce) jigger vegetable oil, vinegar and orange juice. Pour over chicken and vegetables. Seal edges of dry sealer.

Melt butter in a medium saucepan over medium heat; saute onions and peppers over medium heat for about 5 minutes, stirring constantly. Remove peppers and chicken with a spoon; drain on paper towels.

Stir cheese powder and black pepper into chicken and vegetable mixture, stirring constantly. Cover and refrigerate mixture for about 1 hour or overnight. Serve as chicken wings or over salad greens.
