4 eggs
1 cup white sugar
1 cup corn syrup
4 tablespoons pumpkin pie spice
1 1/2 cups margarine
1 cup vegetable oil
1 cup white sugar for decoration
In a large bowl, beat eggs and 1 cup sugar until frothy. Beat corn syrup, pumpkin pie spice and 1 cup margarine in separate, small bowls. Stir the pumpkin mixture into the egg mixture alternately with the margarine and oil. Pour the batter into cookie cups.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
