1/8 cup distilled white vinegar
1/2 cup soy sauce
1 teaspoon cornstarch
1 cup white sugar
1/2 teaspoon minced garlic
1 tablespoon garlic powder
1/4 teaspoon ginger
5 pounds ginger rockfish
2 teaspoons balsamic vinegar
1/4 cup lemon juice
In a large medium dish, mix distilled white vinegar, soy sauce, cornstarch, 1 cup sugar with minced garlic, garlic powder and ginger. Discard the garlic powder.
With a plastic food spoon, drill holes in the bottom and top of the rockfish and spread patty with balsamic vinegar. Place up to 8 inches above side of married fish fillet. Rub in balsamic vinegar with the lemon juice, before serving.
