3/4 cup margarine, softened
1 1/2 tablespoons Worcestershire sauce
1 teaspoon dried parsley
1/4 teaspoon dried basil
3 large red potatoes, peeled and cut in 1/2 inch slices
1 medium onion, cut into strips
1 cup shredded mozzarella cheese
Heat butter in 10-inch microwave-safe skillet over medium heat. Add olive oil, fish, potatoes, onion, and carrots; stir-fry 5 to 7 minutes or until fish flakes easily with a fork.
Spread Worcestershire sauce over fish in the skillet. The sauce will give it a rich depth of color and a more oleaginous appearance. Transfer fish pieces to the skillet and reserve the liquid for garnish.
Place a piece of mozzarella cheese onto the fish. Pour the remainder of the Worcestershire sauce over the cheese; sprinkle with remaining mozzarella cheese and sprinkle with desired amount of blue cheese. Remove fish from skillet and place on a separate plate. Garnish with remaining blue cheese and Serves well.
