2 (1 ounce) squares unsweetened coconut powder
1/2 cup milk
2 tablespoons buttermilk
3 tablespoons vegetable oil
1 cup vegetable oil for frying
2 eggs
1 cup semisweet chocolate chips
1/4 cup banana slivers
1/2 teaspoon vanilla extract
1 cup chopped mint
1/2 cup chopped walnuts
1/2 cup chopped walnuts
1/2 cup sliced almonds
6 tablespoons honey
1 cup banana slices
6 tablespoons chopped pecans
8 10 inch square muffin liners
Place sugar, coconut, milk, buttermilk, oil, eggs, chocolate chips, bananas, pecans, almonds and honey in small saucepan; stir gently over low heat until mixture is melted. Cover; bring to a boil. Reduce heat and simmer, stirring occasionally, for 30 minutes.
Pour mixture into prepared muffin liners or cupcake liners. Sprinkle with banana slices and coconut shavings.
Fry muffins 1 or 2 at a time in hot oil or over low heat, until golden brown. Drain on paper towels.
