1 (3 ounce) package lemon flavored Jell-O
1/2 cup vegetable oil
1 cup vinegar
2 eggs
1 onion, chopped
2 roma (plum) tomatoes, chopped
1/2 cup chopped celery
1/2 cup chopped red onion
2 cups chopped kalamata olives
1 medium carrot, cut into 1/4 inch slices
1 medium sweet potato, peeled and chopped
In a medium bowl, mix together gelatin, oil and vinegar. Mix in eggs, onion, tomatoes, celery, red onion, kalamata olives and carrots. Shape mixture into a ball, place in a large bowl and shape into small loaves.
Mix together the juice and vegetable oil. Pour over salad and toss to coat. Cover and refrigerate for at least 3 hours.
