1 cup butter, softened
1 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 1/2 teaspoons lemon extract
1 teaspoon cocoa powder
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
Preheat the oven to 300 degrees F (150 degrees C). Grease cookie sheets .
In a small bowl, cream together the butter and brown sugar until smooth. Beat in the egg and vanilla. Combine the flour, baking powder and baking soda; stir into the creamed mixture. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
