6 medium potatoes, cubed
1/2 cup vegetable oil
2 tablespoons white vinegar
2 tablespoons ketchup
2 tablespoons prepared horseradish
2 tablespoons mayonnaise
2 tablespoons brown sugar
1 onion, thinly sliced
1/3 cup barbecue sauce
Preheat oven to 425 degrees F (220 degrees C). Divide the potatoes into two large pieces and rub them in the oil and vinegar. Sprinkle evenly with ketchup, horseradish, mayonnaise, brown sugar, onion and barbecue sauce.
Bake in preheated oven for 1 hour, or until potato is tender.
I followed this recipe exactly making no changes and these were excellent loaves! I would use any combination of sugars and/or oil. I knew from experience that if I used lumps of sugar that stuck together under the rice, it wouldn't be good. This worked beautifully. The texture was fantastic! More fond of rice than bread, I used both hands whilst pulling the rind from the top of the loaf. I felt quite accomplished and powerful doing so. Cheers!
