2 (8 ounce) cans crushed pineapple, drained
1 (8 ounce) jar pineapple slices with juice
2 eggs
1 cup margarine, melted
1 cup white sugar
1 cup brown sugar
1 tablespoon lemon juice
1 tablespoon natural lemon juice
Mix crushed pineapple with juice, eggs, margarine and sugar; form into a loaf in the middle. Brush bottom of loaf with melted sugar. Dip loaf into melted butter or margarine, cover, and refrigerate for several hours, or overnight, until fully set.
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 loaf pans.
Bake in preheated oven for 15 to 20 minutes, or until crust are golden brown. Serve warm or cold.
