4 ounces zucchini, trimmed and thinly sliced
1 cup tomato juice
2 small tomatoes, diced
1/2 cup vegetable oil
1/2 cup preserved vinegar
1/2 teaspoon ground black pepper
2 cups whole peeled corn kernels
salt and pepper to taste
Boil about 1 1 hour.
In a small mixing bowl, mix tomato juice, zucchini, tomato juice, tomato juice, vegetable oil, vinegar, pepper, corn, salt and pepper.
Mix well, and strain mixture into a serving bowl. Add sliced zucchini, tomato sauce and corn chili mixture; toss gently.
