1 cup white sugar
2 eggs
2/3 cup vegetable oil
1/2 cup honey
1 teaspoon vanilla extract
1 teaspoon lemon zest
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup amaretto liqueur
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large saucepan over medium heat, bring the sugar to a mixture of 1/3 cup and 1/2 cup of vegetable oil. Boil for 2 minutes, stirring constantly. Remove from heat and stir in honey. Mix flour into the syrup. Gradually mix in the baking soda, stirring constantly. Mix amaretto into the mixture. Pour batter into prepared pan.
Bake in preheated oven for 8 to 10 minutes, until a toothpick inserted into center of the cookie comes out clean. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
