1/2 cup butter, softened
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 cup banana pieces
1 tablespoon lemon juice
1 cup sour cream
1 (8 ounce) package instant vanilla pudding mix
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8x8 inch loaf pans.
In a large bowl, cream together the butter, sugar and egg until light and fluffy. Beat in the vanilla. Add flour, baking soda and banana pieces. Mix together with yogurt and milk; stir into the creamed mixture. Stir in pudding mix, flour mixture and banana powder. Drop by rounded spoonfuls onto the prepared pans.
Bake in preheated oven for 1 hour, or until a toothpick inserted into center of the loaf comes out clean. Cool completely before cutting into squares.
To make the filling: In a large bowl, cream together the sour cream, pudding mix and lemon juice; stir into the banana mixture. Spread over sliced loaf and sprinkle with the remaining flour mixture.
