1 1/3 cups lemon juice
2 teaspoons lemon zest
1 teaspoon vanilla extract
1/2 cup butter or margarine
1 cup lard
1 cup white sugar
2 eggs
1 teaspoon lemon zest
Melt butter in a microwave safe microwave bowl, stirring occasionally until butter dissolves. Mix lemon juice, lemon zest, and vanilla in microwave machine. Pour mixture in small bowl or cup with lemon juice mixture. Continue stirring until flavors are thoroughly blended.
Microwave at 45 third degree (approximately 1/2 inch thick) continuous time on High for 2 minutes. Check to see that both sides of pan have heated.
Remove pan from microwave and place in airtight container. Cool completely. Refrigerate 8 hours or overnight at room temperature.
