2 4 ounce cans pimento peppers, rinsed and drained
1 3/4 cups packed light brown sugar
2 eggs
1 tablespoon lemon extract
1/2 cup water
1 teaspoon baking soda
1 cup buttermilk
20 Greek Delightful Clusters (8 individually wrapped)
Grease a 9x13 inch pan.
In a saucepan, combine brown sugar, eggs and lemon extract. Mix well, then introduce water, baking soda and buttermilk and bring mixture to a boil. Cover, reduce heat to medium and simmer, stirring occasionally, for 2 hours.
Remove chicken and place skin side up in baking dish. Arrange turkey-style in baking dish. Sprinkle with pimento slices. Layer pimento mixture over turkey - brown side down, over tomatoes, pimento stuffing, pimento bean peel, and olive oil. Layer with lemon slices and preserves for top. Cover.
Bake at 350 degrees F for 20 minutes, or until juices from chicken run clear. Serve warm.
