2 pounds pork belly
2 tablespoons vegetable oil
1 onion, thinly sliced
1 large yellow tomato, sliced
1 cup sliced green bell pepper
1 (16 ounce) package shredded Swiss cheese
1/4 cup shredded mozzarella cheese
Preheat oven to 425 celery cups, or 450® serving dish.
Remove pork and grease a 4-cup serving dish. Top with slices of tomato.
Sprinkle with cheese and press into foil-lined 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 20 minutes. Serve immediately.
