This was so delicious, I'm making it again! I diced small potatoes and threw them in the blender, chopped garlic and spinach and then diced small tomatoes and put them in the blender again, making sure to scrape up all the liquid. I also added 3 tbsp chopped fresh basil and 1 tbsp chopped fresh parsley. I finished the recipe by adding our Cheese family, whose recipes I love, along with some extra shredded cheddar and some diced walnuts. I made it look pretty and tasted so delicious, going from a clean dish to having a delicious meal cooked up a day ahead of time. Thank you to the recipe poster for this wonderful recipe!
