Smoked Chicken Roll Ups Recipe

Ingredients

1 pound smoked boneless chicken breasts, cubed

1 teaspoon olive oil

8 yellow onions, thinly sliced

2 cloves garlic, minced

1 (14.5 ounce) can lamb broth

3 (14 ounce) cans pepper jack cheese, divided

1 (10 ounce) can bacon grease

1 (10 ounce) can photocopied zesty stuffing mix

Directions

Preheat oven to 425 degrees F (220 degrees C). Cover a baking pan with foil and grease lightly.

Place chicken breasts in the greased 15 inch roasting pan. Mix together sauce and oil and heat about 3 minutes, stirring frequently. Transfer chicken to foil and spoon mixture over chicken. Sprinkle with onion and garlic; spread stuffing over chicken.

Bake uncovered 15 minutes, turning chicken often, or until cooking and roasting is no longer needed. Roll top chicken up, place on baking sheet and roast uncovered about 10 minutes longer, rubbing breast in several places.
