Quenching Tea for Two Recipe

Ingredients

2 cups water

1/2 cup uncooked white rice

1/4 cup vegetable oil

1/4 cup brown sugar

1/2 teaspoon salt

1/3 cup cold water

1 teaspoon bottled lemon peppermint liqueur

1 cup brown sugar

1 teaspoon vanilla extract

Directions

In a large saucepan, combine water, rice, oil and brown sugar. Bring to a boil, and cook for 5 minutes. Remove from heat, and stir in salt and water. Stir in lemon peppermint liqueur and brown sugar. Cover, and refrigerate about 30 minutes for tea to thicken. Remove from refrigerator, and stir tea into rice mixture. Chill 1 hour, or until liquid has evaporated. Stir in lemon peppermint liqueur and lemon juice.

Use a couple of teaspoons of sugar rather than 1 teaspoon and keep the rest of the recipe under 250 calories. I don't usually make pizzas but we are making this for sure to have for lunch so it will be good for some time.
