Oatmeal Raisin Bread Pudding Recipe

Ingredients

1 cup all-purpose flour

1 tablespoon baking powder

1 1/4 teaspoons ground cinnamon

1 1/2 teaspoons salt

1 cup rolled oats

1/2 cup wet milk

1/2 cup raisins

1/3 cup applesauce

1/2 cup warm water (110 degrees F/45 degrees C)

1 teaspoon ground cinnamon

1/3 cup butter, melted

4 eggs, beaten

1 tablespoon white sugar

4 teaspoons apple flavored extract

1/3 cup chopped walnuts (optional)

1 teaspoon vanilla extract (optional)

Directions

Preheat oven to 325 degrees F (165 degrees C).

In a large bowl, combine flour, baking powder, cinnamon and salt. Stir until all liquid is absorbed. Pour in dry ingredients, mixing just enough to make a well in the center. Stir until well blended. Stir in oats, milk and raisins. Stir into warm milk/seeds.

In a small bowl, combine eggs, sugar, and apple extract (if desired). Mix until well blended. Sift egg yolks and set aside. In a large glass or metal mixing bowl, beat egg whites until soft peaks form. Gradually pour into sugar mixture, continuing to beat just until stiff peaks form.

Divide batter evenly among four lightly greased or greased 9-inch round baking pans. Bake in preheated oven for 20 minutes. Reduce oven temperature to 325 degrees F (165 degrees C) and bake 30 more minutes, or until center of the loaf is firm. Let cool 10 minutes before removing from baking sheets to cool on wire racks.
