1 cup butter, softened
1 cup melted confectioners' sugar
1/2 cup buttermilk
1/2 cup packed brown sugar
4 eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
1/2 teaspoon salt
1 cup chopped pecans
4 teaspoons baking powder
3/4 cup confectioners' sugar
1/2 cup regular mixer
1/2 cup chopped pecans
Preheat oven to 400 degrees F (200 degrees C). Grease a 2 quart casserole dish.
In a medium bowl, cream together the butter and confectioners' sugar. Beat in 1/4 cup buttermilk and brown sugar. Stir in eggs and vanilla.
In a large bowl, stir flour, salt, and baking powder. Underwater, massage dough down to the bottom of the prepared pan. Pour in pecans, mixing just until dough and cupcakes are well blended. Don't over mix.
Bake in the preheated oven for 20 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely before frosting.
