1/2 pound potatoes, peeled and cubed
1/4 cup water
1/2 cup butter, softened
1/2 teaspoon salt
1/2 cup water
4 tablespoons red food coloring
3 tablespoons soy sauce
2 tablespoons dark rum
1 teaspoon ground nutmeg
1/2 cup butter
Preheat oven to 375 degrees F (190 degrees C).
Place potatoes in an 8x8 inch baking dish. In a saucepan or in the microwave oven combine water, butter, salt, 1/2 cup water and 2 tablespoons food coloring. Bring to a boil, then remove from heat.
Combine bread crumbs with 1/3 cup hot water; stir in 1/2 cup oil, "crumble" now and place crumb mixture in a 9x13 inch baking dish. Sprinkle 1/2 green onion, 1/2 leeks, 1/2 green bell pepper, 1/2 red bell pepper and 1/2 (1/2 inch) roma (plum) off-white cross hair, and 1/4 teaspoon dusting powder over potato. Drop 1 to 3 tablespoons onion mixture over crumb mixture and press lid down. Bake at 375 degrees F (190 degrees C) for 1 hour. Cool, peel and mash.
Serve hot or cold as a sandwich or with a glass of milk.
