2 potatoes, cubed
1 (1 pound) package instant potato flakes
1/2 teaspoon baking soda
2 1/2 tablespoons margarine, softened
1/2 cup shredded Cheddar cheese
1/2 cup frozen corn kernels, thawed and drained
In a medium bowl, mix potato flakes, baking soda and margarine. Mix well and place potatoes into a large shallow baking dish.
In a large microwave safe bowl, mix potatoes, corn and frozen corn. Cover with corn mixture and melt.
