3 (15 ounce) cans creamed corn
1/2 cup packed brown sugar
2 (15 ounce) cans green peas, drained
1 small onion, sliced
2 bay leaves
1 orange, sliced
1/2 cup apricot preserves
In a small saucepan, combine creamed corn, brown sugar, peas, onion, and bay leaves. Bring to a boil, stirring constantly. Reduce heat, and simmer for 2 to 2 1/2 hours. Stir in orange slices and pour apricot preserves over all. Spoon mixture into a 2 quart casserole dish.
Bake in preheated oven for 60 minutes.
