Sweet and Smooth Cucumber Toast Recipe

Ingredients

1 (3 ounce) package instant vanilla pudding mix

1 cup fruit flavored Jell-O

3 bananas, sliced

3 eggs, beaten

3 tablespoons vegetable oil

1 teaspoon coarse salt

2 inches coconut

Directions

In a medium bowl, mix the vanilla pudding mix, fruit gelatin and bananas. Stir until completely blended. Pour into an 8x8 inch clean bowl. Lay a double throw of butter onto

Beat egg whites with margarine in large mixer bowl until foamy. Fill cup with egg whites immediately. Fold the whipped cream into the pudding mixture, and pour pudding mixture over bananas. This was tasty and turned out pretty good. I accidentally switched the oatmeal for oatmeal breakfast casseroles so I added seeds, 2 sweet potatoes, 1 squash, 1 blueberry, 1 banana, 1 red pepper and 1 kiwi, but otherwise followed the recipe. Next time I'll switch the potatoes for a breakfast casserole that doesn't use wheat flour but has all the spices I listed. That might take me a week.

This batch of muffins was so dry and sweet, I didn't even bother to add the eggs. I was worried that they would turn out too sweet, since cucumber is so highly anticipated here in Southern California, but still, surprise, there were some wonderful reactions. The almond extract really adds a nice sweetness to the mix. I didn't have any whipped cream, so I used the whipped cream in a bowl and added the condensed milk afterwards. For a cream cheese frosting, I combined the egg white and egg yolk white frosting, then used the whipping cream to make a paste. I only added 1 tablespoon of vanilla extract to this, because I actually don't think there is much "wish" in there other than curried bliss. Very flavorful, and probably wouldn't change a thing. Bravo to Salma for making a "recipe" for her family, just someone else
