1 (8 ounce) package cream cheese
1/2 cup white sugar
3/4 cup vegetable oil
1 cup mashed banana
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 1/2 teaspoons lemon juice
1 cup old-fashioned oats
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) loaf pans. Sift together the flour, baking powder and lemon juice. Set aside.
In a large bowl, cream together the sugar, oil and mashed banana until smooth. Beat in the flour mixture until well blended. Combine the oats, lemon juice and eggs. Stir into the banana mixture until well blended.
Heat a large skillet over a medium heat. Stir in the oats, lemon juice mixture and banana mixture. Bring to a boil, then reduce heat and simmer for 25 minutes or until a small amount of batter is stuck to the bottom of the pan. Remove from heat, stir in remaining apples. Place on a serving platter and spoon the ricotta cheese mixture on top.
Bake in preheated oven until bubbly and golden brown, about 45 minutes. Cool bread completely before serving.
