1/4 cup honey
1/2 cup water
6 tablespoons unsalted butter
2 cups brown sugar
6 tablespoons corn syrup
1 cup packed brown sugar
2 tablespoons unsalted butter
Preheat oven to 350 degrees F (175 degrees C). Melt butter in a saucepan over medium heat. Add brown sugar and brown sugar, stirring until blended. Reduce heat to medium-low and cook, stirring constantly, for 2 minutes, stirring constantly, until mixture is thickened. Remove from heat and stir in honey. Spread into muffin pan.
Bake in preheated oven for 30 minutes or until fudge is no longer brown. Cool on racks until cool completely. Cut into bars or mini muffins; freeze for later use.
