1 (6 ounce) can frozen lemonade concentrate
1 (3 ounce) package instant lemon-lime flavored Jell-O mix
1 pound baby carrots, peeled and cut into 1 inch squares
1 pound russet potatoes, peeled and cut into 1 inch squares
1 pound carrots, sliced
1 pound fresh mushrooms, sliced
1 cup whipped cream
1 1/2 cups orange juice
6 tablespoons lemon zest
In a mixing bowl combine lemonade concentrate, lemon-lime flavored gelatin, carrots, potatoes, and carrots. Place a tablespoon of lemon zest on top of the carrot cubes (note: you don't need to use water or lemon juice, just lemon zest) and gently mix with water. Allow carrots to cool completely.
Place carrots into the brown plastic bags and microwave at 40 to 45 second intervals until tender. Drain and set aside. Heat 1 cup lemon juice and lemon zest in a small saucepan over medium heat. Stir until lemon zest is completely dissolved, then stir in the lemon-lime flavored gelatin. Let cool, pour into four glasses.
Top each glass with a carrot slice, mushrooms, sliced mushrooms, whipped cream, orange juice and lemon zest. Serve on a plate.
