Peach Pie II Recipe

Ingredients

2 tablespoons butter

1 cup sifted all-purpose flour

3/4 cup white sugar

1/4 cup shortening, melted

4 eggs

1 1/2 tablespoons lemon juice

1 1/2 cups chopped peaches (optional)

Directions

Preheat oven to 400 degrees F (200 degrees C). Lightly grease and flour a 9-inch pie pan.

In a medium bowl, cream together the sugar, shortening, and eggs until the shortening is no longer globs. Mix in the lemon juice, peaches (Ripe) fruit, and lemon zest. Pour mixture into pie pan.

Bake in preheated oven for 30 minutes. Remove from oven and allow to cool completely. Chill pie overnight.

Remove pie from refrigerator and cut into desired shape. Frost with whipped cream and sugar if desired and serve piping hot or cold (do not freeze pie). Best served at room temperature.
