1/4 cup brown sugar
1 tablespoon margarine
1 tablespoon vegetable oil
1/4 cup light brown sugar
4 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1/8 teaspoon salt
1 cup vegetable oil
1/4 cup honey
1/8 teaspoon lemon zest
In a medium bowl, cream together the brown sugar, margarine, oil and brown sugar until smooth. Stir in the flour, baking powder, baking soda and salt. Mix in the honey, lemon zest and brown sugar mixture. Form dough into a 1/2 inch thick. Shape into a ball and roll into a 1 inch thick. Store in an airtight container until ready to use.
On a floured surface, roll the dough out to 1/8 inch thickness. Arrange in an ungreased 10x15 inch square pan. Cut into 1/4 inch squares. Place seam side down onto the prepared pan. Brush brown sugar syrup over the squares and drop lemon zest into the top of the squares with a fork. Cover the entire surface of the squares with the brown sugar syrup.
Roll the squares out in a spiral shape so that they are larger than expected. Carefully place one square on each square so that it forms the side of the pan when you lay the other half of the squares. Brush with oil and sprinkle with lemon zest before cutting. Serve the squares wrapped tightly covered with the honey syrup.
