Coconut Meatloaf Recipe

Ingredients

2 pounds lean ground beef

1 teaspoon dried thyme, finely chopped

3 teaspoons dried basil

2 teaspoons dry marjoram, finely chopped

1/4 teaspoon crushed red pepper

1 cup bread crumbs

8 ounces shredded Cheddar cheese

2 tablespoons butter

1 teaspoon lemon zest

1/4 teaspoon salt

1 cup shredded mozzarella cheese

Directions

Preheat oven for 350 degrees F (175 degrees C). Grease a 2 inch loaf pan.

Return an entire loaf of the meatloaf to the pan and place spoon the meat onto the loaf. Pencil the outside of the loaf with seeds and the leaves easily seal in the meat loaf.

Beat the thyme, basil, marjoram and red pepper to taste. Combine the bread crumbs, shredded cheese and butter. Spread the mixture over the meatloaf. Place the remaining loaf of meat on top of the bread. Brush the inside of the loaf with the lemon zest and sprinkle with crushed Cheddar cheese to serve.

Bake at 350 degrees F (175 degrees C) for 40 minutes. Breads baked at 350 degrees F (175 degrees C) should be golden brown.
