Marshmallow Corn Muffins Recipe


1 (12 ounce) package Marshmallow Fluff

1 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1 egg

1/4 cup vegetable oil

2 eggs

2/3 cup corn syrup

1/2 cup buttermilk

1/2 cup vegetable oil

1 cup butter, softened

1 cup packed light brown sugar

1 teaspoon vanilla extract

1 cup crushed cornflakes cereal


Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or liners.

In a large bowl, mix marshmallow fluff, flour, baking powder, salt, and egg. Fold in vegetable oil, corn syrup, buttermilk, vegetable oil, butter, brown sugar, and vanilla. Pour batter into prepared muffin cups or liners.

Bake in preheated oven for 20 minutes, or until a toothpick inserted in center of a muffin comes out clean. Cool completely. Remove muffins from pans. Serve warm.

I have a burrito craving so I decided to make this recipe. My burritos were a hit! However, I added 5 fresh hamburgers, juice of 1 orange, and threw in 1 tsp. basil. Not what I expected.

This is very good and very tasty. I like to add a small pinch of nutmeg to really being out the mild flavor. I added a tiny bit of cinnamon and nutmeg. I love the cookie crust and did press it a bit up the sides. I will make this time and time again.
