1 (10 ounce) package frozen mixed vegetables, thawed
1 carrot, grated
2 egg yolks
1/2 cup butter
1/2 cup chopped celery
1/2 cup green bell pepper
1 teaspoon dried oregano
1 cup canned whole kernel corn
1 celery and onion, chopped
1/2 cup butter
1 cup all-purpose flour
1 (10 ounce) can mandarin oranges, drained
1 (10.75 ounce) can whole kernel corn, drained
1/2 cup chopped red chile peppers
1/4 cup chopped fresh parsley
Place mixed vegetables in a large saucepan with water to cover. Bring to a boil, place a lid on the bottom of pan, and bring to a boil. Boil for 8 to 10 minutes, stirring to break up clumps of water. Cover, let cool, and steam.
Place carrot, onion, celery and green pepper in the pan. Saute for 1 minute, then sprinkle with oregano and pour over vegetables. Sprinkle with corn. Sprinkle with chiles and parsley.
