1 cup baking syrup
2 cups white sugar
1/4 teaspoon almond extract
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 egg white
1/2 cup pumpkin
In a large bowl, mix the syrup, sugar, almond extract, flour, baking powder, baking soda and salt. Mix well. Fold in the pumpkin; pour batter into prepared cookie sheet.
Bake in the preheated oven for 60 to 65 minutes, or until a toothpick inserted through the center of the cookie comes out clean. Allow cookies to cool completely on baking sheet.
These were super-easy. I used the pumpkin pie spice in conjunction with the cookie dough recipe in the pumpkin spice brownie recipe I linked to earlier this evening, and they conflicted naturally with the pumpkin pie spices. Rather than smelling, tasting or tasting like roasted, it was pure bliss. Thank you pack of teeth for lending your assistance to the kitchen. :)
