Carrot Cake Recipe

Ingredients

1 cup vegetable oil

1 (3 ounce) package cream cheese, softened

1 cup white sugar

1 egg

1/2 cup vegetable oil

1 cup packed light brown sugar

1 teaspoon vanilla extract

1 cup chopped carrot

1 1/2 cups sliced almonds

1 cup chopped walnuts

1 cup raisins

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-in. round baking pans.

In a large bowl, cream together the cream cheese, white sugar, egg, olive oil and brown sugar until smooth. Beat in the vanilla extract, chopped carrot and almonds. Fold in the walnuts and raisins. Spread evenly into the prepared pans.

Bake in the preheated oven for 55 minutes, or until a toothpick inserted into the center of cake comes out clean. Allow to cool completely before frosting with frosting.
