Spicy Carne Roja Recipe

Ingredients

1 pound dried green peppers

1 pound dried red peppers

1 teaspoon salt

1 teaspoon garlic powder

2 teaspoons ground cumin

1 teaspoon baking powder

8 ounces carne and red peppers

salt to taste

ground black pepper to taste

Directions

In a medium saucepan combine red peppers, green peppers, salt, garlic powder, cumin, baking powder, and pepper. Place the peppers and the salt mixture over medium heat. Stirring thoroughly, cook and stir slowly for about 5 minutes. Set aside to let them cool.

In a large bowl combine the cooked peppers, orange juice, oil, celery salt, and black pepper. Mix together and spoon mixture into a 10x15 inch casserole dish. Top with the peppers, tomatoes, rice, and cheese.

Bake uncovered at 350 degrees F (175 degrees C) for 30 minutes, or until bubbly.
