1 cup packed light brown sugar
1 cup evaporated milk
1/3 cup lemon juice
1 egg
2 teaspoons vanilla extract
1 1/4 teaspoons almond extract
1 1/4 teaspoons lemon zest
100 English muffins or croissants, split or unwrapped
In a large bowl, mix brown sugar, lemon juice, egg, vanilla extract, almond extract, lemon zest and 100 English muffins.
Preheat oven to 300 degrees F (150 degrees C). Place half a croissant on each muffin. Arrange in a single layer on a baking sheet.
Bake for 40 minutes in the preheated oven, or until toothpick inserted in the top of the muffins comes out clean. Cool before cutting into squares.
