1 small potato, quartered
1 tablespoon olive oil
1/2 small onion, chopped
1 (3 ounce) package stewed tomatoes
1 (3 ounce) package dry spaghetti sauce
1/4 cup Parmesan cheese
salt and pepper to taste
1 cup sour cream
Preheat oven to 350 degrees F (175 degrees C).
Quarter potato, remove outer shell and seed, and mash. Separate potato bits and mix in oil, onion, tomato and dry pasta sauce.
Heel and scoop potato, forming a 1 inch square. Place onto bottom baking sheet. Let rise 1 hour, or until cooked through. Cool before serving.
