1 (2 pound) package potato salad ready-to-use potato mix
1 (8 ounce) package cream cheese
1 clove garlic, crushed
1 cup shredded Parmesan cheese
1 (10.5 ounce) can condensed chicken soup
salt and pepper to taste
Preheat oven broiler.
In a medium bowl, mix potato, cream cheese, garlic, Parmesan cheese, soup, salt and pepper. Divide potato mixture into 12 bowls. Spoon potato mixture into bowls.
Broil 5 minutes, or until brown sugar is melted and mixture is heated through. Stir in soup. Spoon potatoes into 1/2 inch deep fryer, and broil 15 minutes more, or until golden brown. Place warm potato mixture on broiler, and broil 4 minutes more, or until golden brown.
